Healthy Seed & Nut Bread

A nutrient dense, wheat free alternative to your daily bread fix. Packed with superfoods such as chia seeds and psyllium husk, it is a loaf full of fibre, helping to support good digestive health, healthy cholesterol levels and blood glucose control.

Ingredients:

2 Tbsp Organic Chia Seeds (20g)
1⁄4 C Organic Psyllium Husk (35g)
1 1⁄2 C Organic Rolled Oats (150g) (Use Organic Quinoa Flakes for a gluten free option)
1 C Raw Nut Mix Deluxe (150g) (chopped)
1 C Mixed Seeds (150g) (sesame seed, pumpkin seed, sunflower and/or linseed)
1 1⁄2 tsp Fine Sea Salt
400 ml Water
3 Tbsp Extra Virgin Olive Oil

Method

1. Line a standard loaf tin with Parchment Paper (or grease thoroughly with Olive oil), and preheat over to 190°C.
2. Roughly chop raw nuts and then place all dry ingredients into a large mixing bowl and stir to combine.
3. Add the water and Olive oil and mix well.
4. Transfer the mixture into your prepared loaf tin.
5. (Optional - you can leave this to activate for 30mins or up to 8 hours at this stage)
6. Bake in the oven for 60 mins, then remove from the tin, and return loaf to oven for another 15 mins.
7. Remove from the oven and allow to cool completely before slicing.
