Leela’s Seasonal Fruit Cobbler

This versatile fruit cobbler / cake / pie can be made with whatever seasonal fruit you have on hand. Apples, stone fruit, berries, feijoas, you name it. All bring something a little bit different but equally special, to this tried and true Re-store favourite.

Ingredients:

Fruit of choice - approximately 2 cups of sliced, diced or chopped.
1 tbsp sugar of choice (optional)
125g butter (softened)
3⁄4 C of white sugar
1 egg
1 C of standard flour (for a gluten free alternative, use 3⁄4 C gluten and wheat free flour & 1⁄4 C almond meal)
2 tsp cornflour
1 tsp baking powder
1 tsp almond meal (optional

Method:

Pre-heat oven to 180°C and grease a small - medium sized cake tin or oven proof dish. Gently warm the chopped fruit until just softened. You may add in a tbsp of sugar and/ or some spice such as cinnamon while heating if desired.

Meanwhile, cream butter and sugar until pale and smooth. Add in egg and mix.
Add in dry ingredients (flour, cornflour, baking powder) and mix until combined.

Layer a 1⁄3 of the cake mix on the bottom of your tin/ dish.

● Optional step: sprinkle 1 tbsp of almond meal over this layer, to help soak up the juice of the fruits - helpful if using juicy fruits such as berries

Evenly spread the softened fruit over the bottom cake layer, then use the remaining cake mixture to dollop generously over the fruit mixture.

Bake in the pre heated oven for 30 minutes, or until a knife comes out cleanly.

Serve warm with your favourite Duck Island Icecream, or cold as a cake.
