Ralph’s Famous Ginger Cookies

Ginger, oats and chocolate chips combine for the ultimate old-fashioned chewy biscuit, courtesy of our regular customer Ralph Donkin.

Ingredients:

1 C of Brown Sugar
1 C of Organic Quick Rolled Oats
1 C of Wholemeal Flour
1 C of Crystalised Ginger (chopped into small pieces)
1⁄2 C of Organic Thread Coconut
1⁄2 tsp Baking Powder
5 heaped tsp of Organic Ginger Powder
125g butter (melted)
1 Tbsp of Molasses
1 egg (beaten)
1 C of Dark Chocolate Chips
Optional - Dash of Vanilla Essence or Coffee (or both)

Method:

Pre-heat oven to 170°C.
Line 2 x baking trays with parchment or silicone baking mat.

Add dry ingredients (except chocolate chips) to a large bowl and mix together. Add butter, molasses and beaten egg and mix until combined. Lastly stir through chocolate chips and vanilla or coffee if using.

Take a spoonful of mixture and roll into same sized balls, placing them evenly on the bakin trays, until all the mixture is gone. Squash down each ball slightly with the back of a fork.

Bake for around 16 minutes, +/- a minute depending on your oven.
Remove from oven and let cool on a wire rack. Biscuits will harden as they cool.
