Freekeh (or farik) is made from green durum wheat that is roasted and rubbed to create its flavour. With a great nutty flavour and slightly chewy texture, this whole grain is also packed with fibre and essential nutrients such as selenium, potassium and magnesium and is an excellent source of vegetarian protein. Great in summer salads, soups or as an interesting side dish.
