Organic Fine Polenta

Polenta is really a dish, rather than an ingredient, made from organically grown ground corn. Quick and easy to cook, this gluten-free food has become a premium and versatile product. It can be cooked into a creamy thick consistency as a replacement for potatoes or rice, or shaped into balls, patties or sticks and fried until golden brown and crispy.

TO COOK: Add 1 cup of polenta and a pinch of salt to 4 cups of boiling water, stirring continuously. Simmer for 5 minutes. Take off heat and fold in a knob of butter and grated parmesan cheese, if desired.
