Black eyed beans (aka Black eyed peas or Cowpeas) are a creamy coloured mid-sized bean with a prominent black spot. They are a nutrient dense bean, rich in dietary fibre and are a good source of folate, potassium, and iron. When cooked they have a dense texture and nutty, earthy flavour. They are popular in many Southern-style recipes, and are a great addition in soups, stews, curries and salads.
