Nut & Seed Power Slice

This wholesome slice is loaded with nuts, seeds, and slow release energy. It is quick to make, naturally nutrient rich, and perfect for lunchboxes or a grab and go snack.

Ingredients:
• 1 cup (85g) organic rolled oats
• ¾ cup oat flour
⅓ cup (30g) Nothing Naughty Lean Bean Protein or Pea Protein
• ½ tsp cinnamon
• ¼ tsp sea salt
• 1 tbsp coconut sugar
• 2 tbsp sunflower seeds
• 2 tbsp pumpkin seeds
• 2 tbsp chopped almonds
• ½ cup melted Ceres Organics coconut oil
• ¼ cup maple syrup or honey
• 1 tbsp almond butter or tahini
• 80g chopped dried apricots or dates

Method:
 1. Preheat oven to 180°C and line a loaf tin with baking paper
 2. Add all dry ingredients to a large bowl and mix to combine.
 3. Place wet ingredients in a small saucepan and warm gently until melted and smooth.
 4. Pour the melted mixture over the dry ingredients and stir until everything is well coated.
 5. Transfer the mixture to the prepared tin and press down firmly so the slice is compact and even.
 6. Bake for 12 minutes or until lightly golden at the edges.
 7. Allow to cool completely in the tin.

Notes

• Once cooled, refrigerate the slice in the tin for at least two hours or overnight before cutting. This helps it set well and prevents crumbling.
• Store the slice in the fridge to keep it firm and easy to slice.
• You can swap out any nuts or dried fruit for your favourites or whatever you have on hand.
• We also love using peanuts and raisins as a great lower cost version that still tastes amazing.
