Nut & Seed Power Slice
A nourishing bake with plant-powered protein, perfect for lunchboxes, snack plates, or a wholesome bite on the go.
Ingredients:
• 1 cup (85g) organic rolled oats
• ¾ cup oat flour
• ⅓ cup (30g) Nothing Naughty Lean Bean Protein or Pea Protein
• ½ tsp cinnamon
• ¼ tsp sea salt
• 1 tbsp coconut sugar
• 2 tbsp sunflower seeds
• 2 tbsp pumpkin seeds
• 2 tbsp chopped almonds
• ½ cup melted Ceres Organics coconut oil
• ¼ cup maple syrup or honey
• 1 tbsp almond butter or tahini
• 80g chopped dried apricots or dates
• ¾ cup oat flour
• ⅓ cup (30g) Nothing Naughty Lean Bean Protein or Pea Protein
• ½ tsp cinnamon
• ¼ tsp sea salt
• 1 tbsp coconut sugar
• 2 tbsp sunflower seeds
• 2 tbsp pumpkin seeds
• 2 tbsp chopped almonds

• 80g chopped dried apricots or dates
Method:
1. Preheat oven to 180°C and line a loaf tin.
2. Mix oats, oat flour, Protein powder, cinnamon, salt, sugar, seeds & nuts in a bowl.
3. In another bowl, whisk coconut oil, maple syrup, and tahini.
4. Combine wet & dry, fold in fruit, add milk if needed.
5. Press into tin and bake 20–25 mins until golden.
6. Cool fully before slicing.
This one’s pretty forgiving, so chuck in whatever you’ve got on hand and make it your own. Enjoy!
