Icing Sugar is a very finely ground sugar powder produced from regular white crystal sugar and contains a small percentage of maize starch (does not contain gluten) which assists the product to remain free flowing. As it's name indicates, it's main use tends to be in icings and frostings. While no cake would be complete without it, icing sugar can also be used to make goodies such as shortbread, cream fillings, marshmallow, and fondant, providing a smooth, soft finished texture.
