Mung beans are small, dark green beans widely used in India and the Orient and a cherished food in Ayurveda and Chinese medicine. They are a deliciously sweet, soft, and easily digested bean and are a great addition to stews, curries, and soups. Sprouted, they are perfect in stir-fries and make a wonderful addition to salads.
TO COOK; Rinse the beans, then boil until tender about 20-30 minutes
