Navy beans, as they are known in the US (aka Haricot beans) are a small, oval, creamy-white bean with a mild flavour and smooth, buttery texture. In the US, they are the classic ingredient in Boston baked beans. As with other white bean varieties, they are an excellent source of fibre, (the highest of all beans!), protein and nutrients such as folate, copper and iron. Because they get creamy when cooked, they're perfect for pureeing in dips, and thickening soups, stews, ragouts, and more.
