Despite their name, peanuts are not actually a nut, but a legume (think beans and lentils). They are an especially good source of healthy fats, protein, and fiber. They also contain plenty of potassium, phosphorous, magnesium, and B vitamins. Despite being high in calories, peanuts are nutrient-rich and low in carbohydrates. Eat them on their own as a healthy snack, add them to a trail mix or homemade cereal, or use as a topping for stir-fries, curries, soups or salads.
