Potato flour, also referred to as potato starch is a fine textured, naturally gluten-free flour made from cooked, dried and ground potatoes. Often used as a thickener, it helps produce a translucent and glossy sauce. It is best used towards the end of cooking if thickening a sauce, but is also brilliant in gluten free baking or as a component of a crumb for crispiness.
