Oat Choc Chip Cookie Bites

Chewy, golden, and perfectly bite-sized - with a rich tahini twist that takes them next level. These little cookies are made with simple wholefood ingredients like oats, coconut oil, and dark chocolate chips.

They come together in minutes and are the perfect sweet snack for anytime of day 

 

 

Ingredients:

 

- 1 cup oat flour (blend rolled oats until fine)

- 2 tbsp tapioca flour

- ½ tsp baking soda

- Pinch of sea salt

- ¼ cup coconut oil, melted

- ¼ cup maple syrup

- 1 tsp vanilla extract

- 1 tbsp tahini

- 1/3 cup mini dark chocolate chips (or chopped chocolate)

 

Method:

 

1. Preheat oven to 170°C fan bake. Line a tray with baking paper.

2. In a bowl, mix oat flour, tapioca flour, baking soda, and salt.

3. Stir in melted coconut oil, maple syrup, vanilla, and tahini until a dough forms.

4. Fold in chocolate chips.

5. Scoop out small teaspoons of dough, roll into balls, place on tray, and flatten slightly.

6. Bake for 8-10 minutes until lightly golden on the edges.

7. Let cool on the tray for 5 minutes before transferring to a rack.
