Thai Green Curry

Here’s how to make it:
Thai Green Curry
Ingredients:
• 1 tbsp oil (coconut or olive)
• 1-2 tbsp Ceres Organics Thai Green Curry Paste
• 1 can Ceres Organics Coconut Cream
• 1 cup veggie broth or 1 tsp veggie stock for an even creamer sauce
• 1 head broccoli, chopped
• 1–2 bok choy, sliced
• 1 tsp coconut sugar (optional, for balance)
• Sea salt to taste
• Cooked Jasmine rice, to serve
• Optional: add chicken, tofu, prawns, or your protein of choice
Method:
1. In a pan, heat oil and sauté curry paste for 1–2 mins until fragrant.
2. Pour in coconut cream and veggie broth, then bring to a gentle simmer.
3. Add broccoli and bok choy. Cook until just tender (around 5–7 mins).
4. Season with coconut sugar and salt to taste.
5. Serve hot over fluffy rice. Top with fresh herbs or chilli if you like!
