Zesty Lemon Loaf

Lemon lovers, this one’s for you!

This is a fan-favourite year after year – our classic lemon loaf with a healthy twist using Nothing Naughty Fibre Syrup instead of sugar. It’s just as delicious but has a fibre boost and fewer calories. Perfectly moist, tangy, and sweet – your taste buds won’t know what hit them! 

Ingredients:

• 1 ½ cups all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon salt
• 3 large eggs
• ¾ cup Nothing Naughty Fibre Syrup or use raw sugar
• 1 cup Greek yogurt
• ½ cup olive oil
• 2 tablespoons lemon zest
• 2 tablespoons lemon extract
• 1 tablespoon vanilla extract

Icing if desired:
• 1 ½ cups powdered sugar (Icing Sugar)
• ¼ cup lemon juice

Method:
1. Preheat your oven to (175°C) and grease a loaf pan.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In another bowl, beat eggs, fibre syrup, yogurt, oil, lemon zest, and vanilla.
4. Combine the dry ingredients with the wet mixture until smooth.
5. Pour the batter into the loaf pan and bake for 50-55 minutes.
6. Let cool, then mix powdered sugar and lemon juice for the glaze. Pour over the loaf.
